Seafood lovers, meet your newest catch: Poisson, a newly-opened seafood restaurant on Bukit Pasoh Road with an extensive seafood menu.
Welcome to the domain of award-winning chef and leading restauranteur Geoffrey Weckx and Pierre Bolly. With a menu influenced by coastal cities around the world and a Poisson flair, this charming marine-inspired dining room is awash in colours and accented with details of the sea.
The menu is curated by Geoffrey and Executive Chef Ma Yee Khang. Using only the freshest, premium seafood complemented by the finest seasonal produce and flavours to create the perfect balance of zest and spice. All ingredients on the menu are ethically harvested and of the highest quality, sourced from sustainably certified fish farms and independent, international seafood suppliers.
Presented across two sections, seafood lovers will fall into a deep sea of gastronomic excellence as the menu begins with small plates in Cold Stream and ends with hearty, magnificent mains in Hot Stream.
The AMBER&JACK (SGD32++) is a work of art: finely sliced Hamachi, marinated in a citrus vinaigrette and topped with juicy pomegranate baubles.
Other Chef recommendations include AMA (SGD52++), a savoury starter made of locally-sourced blue prawns cured in a spring onion infused oil, topped with Bafun uni and generous amounts of Kaluga Queen Hybrid Caviar.
UNO (SGD62++), a Chef’s signature, features the prized assembly of Uni, smoked Negitoro tuna, salmon roe, Tamago, and seaweed served on a homemade crispy cereal crunch.
Moving on to the hot stream. The ARAGOSTA (SGD52++) arrives in perfect showing. The grilled lobster tail is plated on a sweet, smokey roasted capsicum sauce with the finest grade ibérico de bellota and Jerusalem artichoke shavings.
Next is THE GAME (SGD24++). Taking inspiration from Netflix’s hit series Squid Game, this dish features grilled squid marinated in garlic and topped off with a tangy onion and tomato puree.
However, the trophy for the day’s dish goes to MAXIMUS (SGD75++), a chunky Turbot baked to perfection, with its skin perfectly charred and served with seasonal garden vegetables and grey shrimp Beurre Blanc sauce, needing nothing more.
In addition to the seafaring menu, Poisson offers an extensive beverage list that complements rather than overpowers delicate seafood dishes. Wine connoisseurs can also look forward to exploring interesting finest French vintages to tickle their taste buds.
The extensive wine list showcases Pierre Bolly’s personal touch and Jean Baptiste Voisin, the group’s Sommelier, as they hand-pick the finest French vintages from Alsace, Bordeaux, Burgundy, Côte des Blancs, Loire Valley and Provence while a careful focus on organic, sustainable wines from independent boutique wineries adds to the versatility of Poisson’s beverage programme.
There are also plenty of options under Poisson for those who dare to try something a little different.
The pre-dinner signature cocktail menu has been inspired by some of the world’s most iconic beaches. GIN EL-SALAR (SGD18++), a romantic pink gin and tonic with ruby red pomegranate seeds, is ode to the hypnotic El Salar de Galerazamba or pink sea of Colombia. The GOLDEN DROWN SOUR (SGD18++), Poisson’s take on whisky sour, is a potent mix of cognac agave syrup and fresh lemon juice with a sprinkle of gold specks.
An impressive Sake selection is also included in the drinks menu offering diners a great alternative to wines or cocktails.
