Served cold, the silky noodles are steeped in a light bath of Rishiri and Gagome kombu — premium seaweeds sourced from Hokkaido. The noodles themselves are subtly aromatic, carrying whispers of the ocean and grain in each bite. But it’s the three-step ritual that elevates this dish into something extraordinary.

I also tried the outlet’s signature Shoyu Ramen (from $15) — a dish that’s available at all outlets, but at Paragon, it gets an exclusive umami upgrade with dried Flying Fish (Ago) and Rishiri Kombu.
This is a bowl for the traditionalists, and one that whispers, not shouts. The clear broth is brewed for over seven hours, resulting in deep yet delicate flavours. Paired with tender chashu, spinach, bamboo shoots, nori, and a soft-boiled egg with a molten yolk, every ingredient feels measured, precise, and purposeful. The house-made straight noodles hold the broth like a memory — familiar and comforting, yet elevated.
